Nyama na Irio
Mix the peas, mashed potatoes and sweet corn together and blend with the butter, salt and pepper.
Fry the steak in the oil until lightly browned, then remove from the pan. Add the flour to the remaining oil in the pan and form a roux.
Add the onion soup to the pan and cook stirring constantly until the mixture becomes thick. Season with salt, pepper and a dash of Harissa.
To serve, make a large mound of the Iro (potato purée with the corn and peas) in the center.
Form a hole around 6 cm in diameter in the center and fill it with the steak and the gravy.
