Pa de Pessic




In a large bowl, sift the potato starch, corn starch and salt. Set aside.

Beat the egg whites until stiff and set aside.

Beat the yolks with the sugar gradually until doubled in volume and turn whitish.

Then add the lemon zest and sifted flour mixture, mix it carefully with a spatula.

Finally add the egg whites and mix very gently so as not to fall.

Prepare a pan  brushing it with butter (we used baking spray).

Pour the batter in the pan.

Bake in a previously pre-heated oven at 180 º C for 30-40 minutes.

When cool, unmold anddust with confectioner's sugar.
