Panelitas de San Joaquín




Grease a rectangular baking form.

In a large bowl, whisk the egg whites until foamy, add the yolks and whisk until well blended.

Add the papelón and the sugar together with the anise. Mix until the sugar is dissolved.

Add the flour, cornstarch,baking soda and baking powder (previously sifted together in another bowl), to the egg mixture, fold in gently.

Pour the batter in the baking form and bake on a previously pre-heated oven at 180°C  for 30 minutes or until pricked with a toothpick it comes out


Remove from the form in a wet kitchen cloth sprinkled with sugar.

Let it cool down, cut from it  equal stripes from 40 x 2 cm , then half them rectangles from 15 cm.

Lay them on a baking dish (previously covered with baking paper) and toast them in a previously pre-heated oven at 200°C for 20 minutes or until

golden brown.
