Pastel com o Diabo Dentro
For the pastry:
For the filling:
Wash the potatoes (unpeeled) and place in a large saucepan with enough water to cover them.
Bring it to a boil, reduce the heat and simmer until the potatoes are tender (around 30 minutes).
When the potatoes are done, remove from the saucepan, cool and save the water.
Peel the potatoes, cube them and mash until all lumps disappear. With a wooden spoon, stir in the cornmeal, 1/2 cup at a time.
Continue to add the flour until getting a soft and uniform dough. If it becomes too dry, add 1 or 2 tablespoons of the water reserved from the potatoes.
Roll the dough into a ball, cover with a damp cloth and refrigerate while you prepare the filling.
Place the tuna fish in a bowl. Add salt, red pepper flakes, garlic and vinegar. Combine well, cover and set aside for around 30 minutes.
Heat oil in a medium frying pan. Add the chopped onion and sauté until translucent.
Add the tomato and tomato paste, combine well and simmer for around 5 minutes or until the tomato is soft.
Stir in the tuna mix and cook over low heat for around 5 minutes. add water from the potatoes so the mixture remains moist. Remove from the heat and cool.
Remove the dough from the fridge. Spread a sheet of plastic wrap. Place 1 heaping tablespoon of dough (around the size of a golf ball) in the center.
Press with the heel of your hand to form a circle around 10 cm diameter. Place a tablespoon of filling in the center of the dough.
Fold the plastic and dough over the filling to form half circle. Pull back the plastic and pinch the edges of the dough to seal.
Repeat the procedure with the rest of the ingredients.
Heat oil in a deep fryer and fry (few at a time) for around 3 minutes each side or until golden brown. Drain on paper towels and serve warm.
