Pastel de Pollo con Fondo de Papas




Cook the potatoes in enough water until tender, drain them off, mash them, add salt, pepper, butter and the egg.

In a large frying pan, heat up some oil and stir fry the chicken until browned all side.

Add the rest of the ingredients (except the potato mixture) and let it simmer until heated through.

Grease a baking mold (we used individual baking dishes) and cover the bottom with the half of the potato mixture, distributing it evenly.

Place on top in the middle the chicken mixture. Cover with the rest of the potato mixture.

Brush with beaten egg and bake on a previously pre-heated oven at 180°C until getting a golden color on top.

Serve hot.
