Pastelitos de Carne
For the filling, in a medium pan, het some oil and cook the garlic and the onion for 3 minutes or until translucent.
Add the tomato, chili and culantrillo stir well.
Add the meat and cook stirring constantly until browned all sides.
Add the potato, rice and the carrot, stir fry,
Add pepper, salt, thyme, soy sauce, chili sauce, worcestershire sauce and a little water to prevent it from drying. Let it cook under low fire covered for around 20 minutes.
Uncover and cook until the liquid consumes completely. Let it cool down before use.
For the dough, in a large bowl mix the flour with water, achiote, oil and a pinch of salt until getting a soft but firm dough.
Make balls from the dough, flat them in discs around 10 cm diameter. On the center of each one place one tablespoon of the filling stuff.
Fold the disc and form half moons. seal very good the edges.
Heat the oil in the deep fryer and fry the patties (3 at the time) until golden brown both sides.
Top patties with salad of finely chopped cabbage, pico de gallo or warm and spicy tomato sauce and dry cheese.
