Peanut Butter Crisscrosses




In a large bowl, whisk together the flour, baking soda, baking powder and salt, set aside.

In another bowl, whisk together both types of sugar, peanut butter, shortening and butter. Once it's combined, whisk the egg with it.

With a wooden spoon, blend the flour mixture into the peanut butter mixture, stir until combined, cover the dough and chill until firm.

Remove the dough from the fridge and form balls from 3 cm diameter.

Roll the dough ball in the sugar, lay the balls (leaving 7 cm separation between them).

With the help of a fork slightly flatten the balls by making a crisscross pattern.

Bake in a previously pre-heated oven at 180°C for 10 minutes or until the cookies are lightly brown around the edges.

Let the cookies cool down completely.
