In a bowl, combine all the ingredients together until getting a soft dough and let rest, covered in a warm place for 2 hours.

In a large bowl, place the flour, salt and the instant yeast.

In a small saucepan pour the milk, sugar and butter, cook until the sugar is dissolved.

Add the egg yolks and the lemon extract to the flour and mix to combine.

Add the milk mixture, little by little mixing until getting a soft but not sticky dough.

Finally, add the finely chopped pineapple and mix until fully incorporated.
