Pineapple Fried Rice

                                                                                                

Ingredients:

Preparation:

In a frying pan, heat up 1/2 tbs peanut oil.Make an omellete. When cooled finely shred it in stripes. Set aside.

In a large wok with low heat.Add 1/2 tbs of peanut oil and sauté the garlic until it's golden brown. Set aside.

With moderate heat sauté the prawns until they're pink. Set aside.

Stir in the remaining oil and turn on the heat high.

Add the rice and stir.

Then add the chili, corn, peas, pineapple and garlic. Stir quickly for about 5 minutes.

Then add the prawns, cashew nuts and eggs, followed by the soy sauce and some white pepper and salt to season.

To serve, top it with the scallions.

Serve hot.
