Porc - Colombo

                                                                                                

Ingredients:

Preparation:

Season the pork with salt and pepper, 5 garlic cloves, 1 chilli, ground clove and a little vinegar. Let it marinate for 30 minutes.

In a frying pan, heat up a little oil and sauté the onion and the rest of the garlic until soft. Then add the coriander, anise seed and thyme.

Drain the meat and add it to the pan along with the mango.

Cook stirring constantly until the meat is browned all sides. Add the other chilli.

Add the aubergine, zucchini, and the potatoes together with the colomba powder. Add a little water, just enough to cover everything.

Cover and let it simmer for 50 minutes (stirring occasionally) or until everything is tender.

Adjust seasoning. 5 minutes before the end of the cooking time add the lemon juice on top.
