Poulet Au Lait De Coco (Martinique)
In a large wok, melt the butter and sauté the chicken until browned all sides.
Add the onion, garlic, curry powder and saffron. Sauté for 5 minutes.
Add the coconut milk or broth, the thyme, green onions, parsley, salt and pepper. Mix well, cover and let it simmer for around 20 minutes. Serve.
