Place the chicken with the water and salt in a saucepan and let it simmer until tender (around 30-35 minutes).
Remove the chicken from the pan and reserve 1 cup from the stock.
Cool down the chicken pieces and reserve.
Melt 2 tablespoons of butter in a frying pan, add the chicken pieces and sauté until browned.
Remove the chicken from the pan and reserve.
Melt the remaining butter to the frying pan.
Add the flour and cook stirring constantly, until it's lightly brown.
Add the stock and bring it to a boil, keeping stirring for avoiding lumps.
Add the vinegar, garlic, walnuts, salt and pepper.
Stir and cook until warm.
Serve the chicken with a spoon sauce over.
