Add the flour and the quark in a large bowl.

Add the yeast and mix well.

Add the salt and butter to the milk, pour into the flour mixture, stirring until a soft dough forms.

Shape the dough into a ball, remove from the bowl and on a floured work surface with your hands knead vigorously for 10-15 minutes or until the dough is no longer sticky.

Form the dough into a ball and place in a floured bowl, cover and let it rise in a warm place for around 2 hours.

Knead briefly the dough and form a round loaf, place on a lined baking tray, cover and let it rise for 30 minutes.

Brush with the eggwash.

Bake in a previously preheated  oven at 180°C for 50 minutes or until golden brown and as tap on top it sounds hollow.
