Rakott Palacsinta Sonkaval

In a bowl, combine the eggs, milk, club soda and water.

Add the flour, sugar, salt and vanilla to form a smooth batter.

Heat a teaspoon butter in a frying pan and using a small ladle add enough batter to coat the bottom of the pan in a thin even layer.

Cook for around 2 minutes on the first side and 1 1/2 minutes on the second side or ontil the pancake is lightly browned.Remove from the pan and set aside.

Do the same procedure with the rest of the batter.

Once you have the palacsinta ready (around 16) a few more or less won't matter, start with the building process.

Line a baking dish with baking paper, grease a baking ring (adjusted to the diameter of the palacsinta and set aside.

In a bowl, mix together 4 1/2 tablespoons butter, egg yolks, ground ham, sour crem, garlic, salt and pepper.Fold in the egg whites (previously beated until stiff) until well incorporated.

Place one pancake at the bottom of the prepared dish and ring, cover with a thin layer of the ham mixture and then cover with another pancake.

Repeat this process with the rest of the ham mixture and pancakes finishing with the ham mixture.

Mix the cracker crumbs with 4 1/2 tablespoons butter.Spread evenly over the top of the Rakott palacsinta sonkaval.

Bake uncovered on a previously pre-heated oven at 180°C for 30 minutes or until the crumbs are golden.

Cool down, run a knife around the edges of the ring and remove it.Place on a serving dish and cut into wedges.
