Romanian Pork and Noodles
In a bowl, combine 3 eggs and salt, beat well and then add the noodles, toss until thoroughly coated in the egg. set aside.
Blend the bread and cream in a separated bowl, then stir in the pork, onion, oregano and parsley. Season with salt and pepper.
Mix thoroughly with your hands to combine, then beat with a spoon until getting it smooth.
Butter a large casserole dish (we used individual ones) and arrange 1/3 of the noodle mixture on the base.
Spoon half the pork mixture over the top and top with 1/3 of the butter.
Add the next 1/3 of the noodles over the top followed by the remaining meat mixture.
Then a further 1/3 of the butter. Top with the remaining noodle mix and then the remaining butter.
Cover and bake on a previously pre-heated oven at 180°C for 35 minutes.
Meanwhile combine the remaining eggs, sour cream and cheese in a bowl and beat until thoroughly blended.
After the 35 minutes are up, pour this mixture on top of the casserole, then cover and return to the oven for 30 minutes more.
Remove the cover and return to the oven, bake for 20 minutes or until the top is brown and bubbling.
Typically the dish is unmoulded by running a knife around the sides before placing a plate over the top and inverting (we ommited this).
