Sacher Torte



For the cake:

For the cake:

The first thing is to butter a 26cm springform pan and patch with baking-paper the bottom.

In a bowl mix the flour with the cocoa, the baking powder, the vanilla sugar and the salt. Set aside.

In another bowl mix the eggs with the sugar until getting three times the volume and they become foamy.

Add the melted butter (being careful ) to the eggs with the sugar.

Once that the butter is incorporated we start to add the mix of flour and cocoa straining little by little over the mix of eggs and fold it

with soft movements with the spatula for avoiding that the mix go down and the cake result clammy.

Add the mix to the springform and place it in the pre-heated oven at 180 degrees celcius for around 25 min.

Prick in the middle of the cake to check that it's ready, the toothpick has to go out of the cake clean.

Remove it from the springform and let it cool-down.

Once the cake is cold, cut it in two layers and spread it with the syrup (that we're going to explain the preparation down).

For the syrup:

Mix in a pot the water with the sugar, let it boil around 10 min. Once you remove it from the fire add the rum to it.

For the filling:

Mix the apricot preserves with the multi-quick until it becomes softer, if it is still to sticky add a little of water and heat it up a little.

We've now the filling ready, so spread it over the layers.

For the frosting:

Place in a pot the whipped-cream and let it boil, once it has started to boil add the chocolate chopped in small pieces.

(to help it melting faster) and keep moving the mix with a wooden spoon or a spatula for avoiding that the mix get attached to the pot.

Once the chocolate is melted add the butter and move the mix quickly for making that everything becomes homogeneous.

Pour the frosting over the cake when it's still warm, in this way you'll get a smooth surface.

Even when the Sacher torte doesn't have decoration, we like cherry so we thought it was a good detail for the decoration.
