Preparation:

In a large pan, heat up the oil and sauté the onions until translucent. Add the garlic and the tomatoes. Continue cooking for 2 minutes more, stirring occasionally.

Add the chicken, the spices and the tomato paste. Stir and cook for 2 minutes more. Add 3 cups of water. When it comes to a boil, sdd the chopped vegetables.

Cover and cook until the chicken is well done and the vegetables are tender.

Serve with rice.
