Preparation:

In a large frying pan, heat up the oil and  fry the beef until browned all sides.

Add the onions, chilli and tomatoes and let it simmer for around 5 minutes or until the tomatoes become soft.

Add the egusi and the water, reduce the fire and let it simmer for around 1 hour.

Add the spinach, salt and ginger, let it cook for around 10 minutes.

Serve on a bed of rice.
