Shorbat hummus wa fool

                                                                                               

Ingredients:

Preparation:

Heat the oil in a large saucepan and sauté the onions and garlic until the onions are transparent.

Add the tomatoes, the cilantro and the cayenne pepper.

Cook for around 15 minutes, add the water and the tomato juice from the tomato tin, bring all to a boil, then add the fava beans,

 reduce the heat and simmer until the favas

 are tender.

Pour in the chickpeas and the diced potatoes, bring it to a boil, reduce the heat and simmer for around 30 minutes or until the

 potatoes are tender.

When ready to serve, add the oregano and season to taste. Ladle into bowls and serve immediately.
