Heat the olive oil in a pan and use it to fry the onion and bell pepper for around 4 minutes or until soft.
Add the garlic and continue frying for 2 minutes, then take off the heat and set aside to cool down.
Meanwhile in a large bowl combine all the remaining ingredients, add the vegetable mix from the pan.
Using your hands, mix all the ingredients until combined.
Lightly grease a rimmed baking tray (we used a piece of aluminium foil, oiled and a baking tray).
Then turn the mixture onto this and shape into a large loaf.
Transfer to an oven previously pre heated at 180°C and bake for 50 minutes.
Remove from the oven and set aside to stand for about 10 minutes before slicing.
Traditionally served with baked potatoes and sweetcorn or peas.
