Sopa de Fideos
In the blender, mix the tomatoes, onion and garlic until smooth.
Warm the oil in a medium skillet and add the fideo noodles. Cook over medium heat, stirring regularly until golden brown. Remove from the heat.
Combine the tomato mixture, chicken broth and the noodles in a saucepan. Season with salt and pepper.
Bring it to a boil and the reduce the heat to medium and let it simmer for around 8 minutes or until the noodles are tender.
Add the cilantro and cook for 2 minutes more. Serve directly.
