Sopa de Frijoles con Costilla de Cerdo y Masita



  1. Cormeal, 2 cups
  2. Water (enough for getting a soft but stable dough)
  3. Salt, a pinch of
  1. Tomatoes (peeled and chopped), 6
  2. Hierba buena (finely chopped), a bunch of
  3. Coriander (finely chopped), a bunch of
  4. Sour orange, 1/2
  5. Green chili (finely chopped), 1
  6. Salt
  7. Pepper


In a large saucepan, place the bouillon, the spare ribs and the kidney beans. Cook on low heat until the spare ribs are tender.

Add the vegetables (except the avocado) and the Masitas (carefully for avoiding they desintegrate).

Season with salt, pepper, coriander and celery.

Cook on low heat until the vegetables are tender but complete and the masitas flote.

For the chirimol, in a small bowl mix all the ingredients and season with salt and pepper.

Serve the soup with the chirimol, slices of avocado and the grated hard cheese.
