Soupe aux Lentilles et Legumes

Preparation:

In a large saucepan, heat up the oil and fry the onions for a few minutes or until soft.

Add the lentils stirring to ensure that they're completely coated with the oil. Add the stock and simmer for 20 minutes or until the lentils are soft.

Add the remaining ingredients, allow to simmer for 15 minutes. Serve with crusty bread.
