Soupe Djiboutienne




Place the meat in a large pot, cover with heavily-salted water, bring to a boil and cook over medium heat for 20 minutes.

Drain the meat then place back in the pot along with all the vegetables. Add enough fresh water to cover the ingredients and season to taste with salt.

Bring to a boil, reduce to a simmer, then cover the pot and cook for about 30 minutes, or until all the ingredients are tender.

Turn into a bowl and serve garnished with chopped coriander (we ommited this).
