For the souvlakia:

Thread the meat cubes onto the skewers.

On the grill, place the skewers and sprinkle them with salt, turn them to the other side and do the same.

Cook the skewers evenly on all sides.

Remove the meat from the skewers and make new ones placing in between pieces of tomato and onion ("own idea" the recipe calls for placing the meat and

vegetables "finely chopped" together in a sort of salad).

pour the lemon juice over the skewers and the chopped parsley.

Serve over warm pittes (the recipe calls for filling the breads with the meat-vegetables mixture).

For the Pittes:

In a large bowl, sift together the flour, yeast and salt.

Make a well in the center of the flour mixture and pour in the water.

Mix well together until getting an uniform and well incorporated dough.

knead over a lightly flour surface until getting an smooth dough.

Divide the dough into 6 equal pieces with the help of a sharp knife.

Shape each piece into a ball and them make from each ball a circle from around 10 cm diameter and 2 cm thick.

Bake on a previously pre-heated oven at 180°C for 10 minutes or until lightly browned.
