Spicy Nutmeg Chicken



  1. Sugar, 2 tbs
  2. Water, 2 tbs
  3. Dark rum, 1 tbs
  4. Nutmeg, 1 tsp


Bring sugar and water to boil in small saucepan. Cook and stir until sugar dissolves. Stir in rum and nutmeg. Se aside.

Season chicken with salt, pepper, crushed garlic and onions. Bake for 15 minutes in a previously pre-heated oven at 180º C.

Remove chicken from oven and baste with mixture of nutmeg syrup, soy sauce and ground ginger.

Lower oven to 170ºC and continue baking for one hour, basting frequently. Serve hot.
