St Patrick's Cheesecake Ice Cream
With the electrical mixer, beat the whipping cream until thickened into a soft cream.
In a large bowl, mix the mascarpone and philadelphia until well blended.
Add the condensed milk and mix until well blended. Then add the lemon extract, green coloring and rum and mix until well blended.
Add the whipped cream to the condensed milk-cheese mixture and mix just enough until uniform.
Pour it all into a plastic container and freeze for at least 4 hours.
