Sweet Potato and Pea Soup
In a large sauce pan, fry the onions and garlic with a little oil for 5 minutes, then add the ginger, salt, cayenne pepper and garam masala.
Cook stirring constantly for a few minutes, add the tomatoes and sweet potato, stir well to combine.
Add the water. Bring it to a boil, reduce the heat and let it simmer for some minutes, cover and cook for 5 minutes before adding the peas.
Cook for 10 minutes more, take off from the heat and add 440 ml cold water.
Purée the soup in a blender, return to the pan, heat through and serve.
