Tarta de Arequipe y Maní




Mix in a bowl the egg white until firm, add the sugar slowly and follow mixing until it's completly disolved.

Then add the egg yolks and the vanilla, sift the flour with the baking powder, add this mix slowly to the bowl mixing until well blended.

On a baking pan (previously covered with baking paper) add the batter. 

Place it in the oven (previously preheated at 180°C).

Bake the cake for around 20 minutes or until picking with a knife in the middle it comes out clean.

Cool down the cake and remove it from the baking shape.

Cut the cake in two layers.

Brush the lower layer with the coffee, then add a layer of arequipe and sprinkle it with peanuts.

Lay the other layer on top of it, brush the top with coffee again.

Then cover the top of the cake and the sides with the remaining arequipe.

Finally sprinkle the cake with chopped peanuts.
