For the cake:

The first thing is to butter a 26cm springform pan and patch with baking-paper the bottom.

In a bowl mix the flour with the cocoa, the baking powder, the vanilla sugar and the salt. Set aside.

In another bowl mix the eggs with the sugar until getting three times the volume and they become foamy.

Add the melted butter (being careful ) to the eggs with the sugar.

Once that the butter is incorporated we start to add the mix of flour and cocoa straining little by little over the mix of eggs and fold it with soft movements with the spatula for avoiding that the mix go down and the cake result clammy.

Add the mix to the springform and place it in the pre-heated oven at 180 degrees celcius for around 25 min.

Prick in the middle of the cake to check that it's ready, the toothpick has to go out of the cake clean.

Remove it from the springform and let it cool-down.

For the frosting:

Place in a pot the whipped-cream and let it boil, once it has started to boil add the chocolate chopped in small pieces (to help it melting faster) and keep moving the mix with a wooden spoon or a spatula for avoiding that the mix get attached to the pot.

Once the chocolate is melted add the butter and move the mix quickly for making that everything becomes homogeneous.

Pour the frosting over the cake when it's still warm, in this way you'll get a smooth surface.

During the time that the cake cools down we start with the mice.

For the marchpane mice:

We'll start  mixing the finely grinded almonds with the confectioner's sugar and the pasteurized egg whites (little by little until getting a soft an homogeneous pastry).

Divide the pastry in two and cover it with kitchen-foil, lay this in the fridge for some hours (this will help us to handle easier with the pastry).

We take one part of the pastry and we add the liquid food coloring to it and knead it very well until the color is uniform.

Do the same with the other part of pastry and use the other color.

We take portions of the pastry in one color and form from them the ears and the tails.

With the other portions of the pastry with the other color you'll make the body of the mice.

For the eyes and the nose use sprinkles.

Once we've the mice ready we take a apple core remover and we make with it holes on the cake in different places.

Finally we lay the mice on the cake.
