In a large pot, het 3 tbs oil. Add the chicken and fry until well browned all sides.

Remove the chicken from the pot and set aside. Fry the onions and garlic in the same pot, just until softened, then add the tomato paste.

Reduce the heat and simmer for a few minutes.

Return the chicken to the pot. Add the peanut butter and reduce the heat. Add just enough water to form an smooth sauce.

Add the spices, stir to mix and simmer until the chicken is tender.

Traditionally served with fried or boiled plantains (we forgot the picture of it) or on a bed of rice.
