Preparation:

In a frying pan, heat 2 tablespoons oil over medium heat. Add the onion and sauté stirring constantly for around 10 minutes or until lightly browned, transfer the onion to a bowl

and reserve.

Add the remaining oil and the butter to the frying pan, heat up over medium heat. Add the chicken pieces and fry for around 20 minutes or until browned all sides.

Season the chicken with salt and pepper.Add the onions back together with the tomatoes and its juices. Cover and turning occasionally, simmer over medium heat for about 25

minutes or until the chicken is tender.

Pour the beaten eggs over the chicken, distribute evenly. Cover the pan and let it cook for around 7 minutes or until the eggs are set.

Serve directly granished with the cilantro.
