Heat up the oil in large pan and fry the meat until browned all sides, then add the chilli and fry for 1 minute more. Add the tomatoes and cook for 10 minutes.

Add the spring onions, mustard greens, spinach and watercress and fry until the greens are wilted.

Add the remaining ingredients, cover the pot and simmer very slowly until the rice is cooked and all the liquid has been absorbed.

Season to taste and serve with hot pepper sauce such as Sakay.
