Zahtar-Spiced Barbecued Chicken



  1. Sesame seeds, 50 gr
  2. Ground sumac, 25 gr
  3. Powderes dried thyme, 25 gr


For the Zahtar spice:

First dry roast the sesame seeds in the oven until they become golden brown.

Allow to cool down, then powder the thyme in a mortar, mix in the sesame seeds and sumac.

For the chicken:

Place the meat (or chicken in our case) in a glass bowl, sprinkle with the lime juice and toss to combine. Cover the bowl and set aside for 30 minutes.

Wash the meat with plenty of water, pat dry it and whisk in a small bowl together the oil, vinegar and zahtar.

Pour this over the meat, toss to combine, cover and let it marinate in the fridge for at least 2 hours.

After this time, remove the meat from the marinade (reserve it), then place on your pre heated grill pan. Cook for about 15 minutes, turning frequently or until the meat is done,

 basting frequently with the marinade as you cook.
